Tropical Delights

Donna Hay Tropical Delights
This week we're going troppo with Donna Hay dishes that transport you straight to the tropics. Maybe you'll come up with a killer cocktail, perfect for sipping in a hammock slung between a couple of palm trees;  maybe you'll bring us a concoction of fresh tropical fruits (mango, papaya, lychee, pineapple, coconut, dates, dragon fruit);  or perhaps some fish wrapped in banana leaves or a fragrant seafood curry will be your choice.   No matter which direction you head to explore this theme, Donna will have some Tropical Delights to inspire you. 

So what are you waiting for?  Choose any Donna Hay recipe that transports you to the tropical island in your mind, and post your dish by Sunday 2 March.

I finally tried a baked risotto dish, this one with shrimp.

Love the choice of chefs - makes it hard to decide!

As you probably know, I have not been posting since my daughter's death but I hope to start again, next week. Thanks to those of you who stopped by to share your condolences. It has been a hard time but the one thing, we still do is eat and this may be a way to help me get back to some normalcy. I am enjoying Donna Hay immensely.

Fish poached in coconut, kaffir lime, lime juice and green chillies was very moist and flavorful.

We prepared for impending doom (aka winter storm 2014) by enjoying Donna Hay's Quick raspberry and banana ice cream. Delicious and fruity!
