Time to get your celebration on because it's almost Cinco de Mayo!
According to History.com: Cinco de Mayo—or the Fifth of May—commemorates the Mexican army's 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867). A relatively minor holiday in Mexico, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. Cinco de Mayo traditions include parades, mariachi music performances and street festivals in cities and towns across Mexico and the United States.
So let's celebrate! Pick your favorite festive Rick Bayless party dish from any of his cookbooks or online and post it on May 5th or anytime by Sunday, May 6th to join in the Cinco de Mayo fun!

I'm ready this week with a fun appetizer for Cinco de Mayo -- Sopes, these were yummy and my whole family enjoyed them which doesn't happen too often :)
Woot! I am ready to party!
Party time - there may be a margarita in my future :)
I've always wanted to do a special post for Cinco de Mayo. Hopefully I can get my act together and actually post on 5/5. We'll see! Love the post, Deb!
There ARE margaritas in my future! ;)
Bacon & Tomato Guacamole this week. It's like a BLT on chips.
I too see Margaritas in the very near future. I'm making my list of things to buy.
Woo Hoo. Cinco De Mayo came early for us. Wonder what else I can make for this Saturday for the real celebration.
I am so loving learning Mexican cuisine with you guys! My Bacon-Flavoured Gorditas with Roasted Poblano Guacamole and Chunky Tomato Salsa on the side is up!
Serving up a bowl of festive Sopa Azteca (Tortilla Soup) at my place!
Had to celebrate with Roasted Garlic Guacamole and fruity and refreshing Agua Fresca Veraniega (aka Rick's Favorite Summer Soft Drink). Both are fabulous. ;-)
Have some drumsticks with tomato serrano sauce at my place :D
Blood Orange Margaritas at my place - hurry before they disappear! =)
I'm so excited for my first IHCC entry! So happy to have found you all.
Frozen tropical margaritas at my place. Very tasty!
Mexican Scrambled Eggs for the day after all those margaritas!!
Natashya - Those bacon gorditas are positively mouth-watering. I'd love to crunch into a few of those!
Forgot to leave a comment yesterday that my post was up! On to next week's adventure!
Thanks Kim! They were really tasty - and lots of fun to make!
We had lots of the salsa left over, and since so many people paired mac and cheese with salsas the other week - I made some mac and cheese and some jalapeno sausages and served them with the leftover salsa the next day. So happy to have had that inspiration from our I♥CC peeps!
