It's a simple, humble grain, but rice is the the most important staple food for a large part of the world's population.

Rice is versatile. There are many different kinds of rice to choose from. Different colors, textures, sizes, and tastes. A rice for everyone

This week show how Rice is Nice! by picking a Tessa Kiros recipe that features rice.

I know, I know, I disappeared off the face of the earth for a couple of months, but I am back and I am going to go back and post the ones I missed bit by bit, so don't feel you need to check up on me, but I am hoping to be a bit more attentive from now on. In the meantime, here's rice...and a lovely, lovely rice dish it is at that. Definitely a repeat.

I turned the Tomato Rice side dish from Piri Piri Starfish into a hearty main dish Tomato Rice with Veggies & White Beans. Quite tasty!

I took that yummy tomato risotto and turned it into a smoky tomato risotto- YUM!

I did the tomato risotto too! But then turned it into fried risotto balls. Can never go wrong with rice. Off to see what everyone else made!

Okay, so Tessa's fried risotto balls are SO GOOD!! One of the best things I've put in my mouth for awhile:)

Looks like this was the week of risotto!
Kim-love the gooey cheesy middle in the risotto balls. A little bonus of fried mozz!
