It just has to be a Rick Bayless recipe--remember we are cooking with him through the end of the month before we switch to our new chef Madhur Jaffrey, and of course it has to be posted by Sunday, September 23.

In my lunchbox this week is a vegan version of Rick's Mexican-Style Sweet Roasted Garlic Soup with added chickpeas and spinach. A really yummy lunch. ;-)

ReplyDeleteNatashya - I remember that shrimp dish very well! Shrimp and garlic are totally besties, but shrimp with avocado are definitely next in line. Love the idea of a spiced up guac.
ReplyDeleteYummy sounding lunches ahead of me!! Mmmm-mmmm! My lunch box (and I found one like one I carried way back...) features sopes filled with an adaptation of Rick's Beef Shorts with Tomatoes, Roasted Poblanos, and herbs. These are perfect little lunch boats!
