I almost never make my own salsa (laziness?) ;-) so this is a good week for me.
I just put my pretty green salsa in the fridge to meld its flavors overnight, ready to be used in a recipe tomorrow. Will post it soon.
I brought the mac and cheese ...with salsa!! =) So. Good.
Love this theme, but I'm having way too much trouble trying to narrow it down. Way too many possibilites!

Finally got around to choosing a dish- a very pleasant fish dish in a nicely spiced sauce!
I've made some hot sauce, really hot stuff! Love it!
Huaraches with Black Beans and Salsa are up! And I have a couple left for lunch...
So damned good!
Rick's Tangy Green Guacamole is AMAZING! The Tomatillo Salsa w/ Serranos, Roasted Onions & Cilantro that goes in it is pretty terrific too. Very happy with my dishes this week. ;-)
I made a jalapeno salad dressing. "Meh" at first, but after a few days it became a "yay!"
Sliding in at the last minute with two kinds of guacamole here, pretty yummy stuff :)
I made it!! (just got back from a quick trip) I really, really liked this dressing.
Now, what's up for next week?
