Meatless Monday! {or Tuesday, or Wednesday, etc...}


We sure have come a long way since Meatless Monday was first introduced! Now going meatless has become somewhat commonplace and very widely accepted. It is so nice to see so many new meatless options!

I brought a Moroccan style vegetable pastilla based on a Mark Bittman recipe.

I love this sun-dried tomato pasta and find it a good excuse to eat either feta or burrata!
