The idea of a virtual potluck where food enthusiasts come together to share their culinary creations is simply delightful. I've always been a fan of trying out new recipes and learning from fellow cooks, and this event seems like the perfect opportunity to do just that.

Well, 8 days into returning to school and covid is rearing it's ugly head. I was down for the count last week with covid and if I'm being honest, I'm still not feeling well this week. It's going to take awhile for me to get my energy back. Glad to be sharing a dish I made over the summer and saved for a situation such as this. Tieghan's Creamy Tomato and Ricotta Pasta was such a big hit - garden fresh but also comforting and soft and just delightfully delicious. I do think it makes a difference when you make it with garden fresh ingredients instead of store-bought. A real favorite!

Please be careful everyone! The germs are spreading and the covid is brutal!
