It's time to welcome our new chef, Eric Ripert, to I Heart Cooking Clubs. We will be cooking with Chef Eric through September 30th, so let's welcome him with a toast and a recipe!

I partner Lydia on the rillettes--I made his salmon version from Avec Eric. Delicious!
